Seedy Chewy Granola Crumble

INGREDIENTS

1 cup gluten-free rolled oats

2 tablespoons chia seeds

1/4 cup raw quinoa, rinsed

1/4 cup figs/dried cherries, chopped

1/4 cup almonds

1/4 cup pumpkin seeds

1/4 cup coconut flakes

1/2 teaspoon cinnamon

1/4 cup maple syrup

1 teaspoon vanilla extract

1/4 cup runny almond butter

1 tablespoon coconut oil


METHOD

Preheat oven to 325 degrees F.

Place oats, almonds, pumpkin seeds, quinoa, and coconut flakes on a parchment-lined baking sheet and bake for 10-15 minutes, or until coconut is golden.

In a small saucepan, heat maple syrup, almond butter, and coconut oil. Then add vanilla, salt, and cinnamon.

In a large bowl, combine wet and dry ingredients.

Press into a pyrex and refrigerate overnight.

Cut into bars or crumbles.
