Breakfast Nourish Bowl
INGREDIENTS
Eggs, prepared as desired (I like to add additional egg whites for more protein)
Cottage cheese/greek yogurt/labneh
Persian cucumber, chopped
Cherry tomatoes, chopped
Kalamata or castelvatrono olives, quartered (optional)
Fresh mint, torn
Lemon juice
Olive oil
Black pepper
Zaatar
Microgreens
METHOD
In a small bowl, combine cucumber, tomato, olives if using, mint, lemon juice, olive oil, salt, and pepper. Mix well. Taste and adjust for seasoning.
Spread your cottage cheese or yogurt in a bowl. Layer with the cucumber-tomato salad. Season with zaatar.
Add your eggs and top with micro greens. Enjoy!
