Breakfast Nourish Bowl

INGREDIENTS

Eggs, prepared as desired (I like to add additional egg whites for more protein)

Cottage cheese/greek yogurt/labneh

Persian cucumber, chopped

Cherry tomatoes, chopped

Kalamata or castelvatrono olives, quartered (optional)

Fresh mint, torn

Lemon juice

Olive oil

Fine grain sea salt

Black pepper

Zaatar

Microgreens

METHOD

  1. In a small bowl, combine cucumber, tomato, olives if using, mint, lemon juice, olive oil, salt, and pepper. Mix well. Taste and adjust for seasoning.

  2. Spread your cottage cheese or yogurt in a bowl. Layer with the cucumber-tomato salad. Season with zaatar.

  3. Add your eggs and top with micro greens. Enjoy!
