Repurposed Orzo Salad with Radicchio, Cherries, + Feta

INGREDIENTS

Spring orzo salad recipe

Thinly sliced radicchio

Cherries, pitted and quartered

Castelvatrano olives, quartered

Basil, julienned

Feta, crumbled

Lemon zest

Lemon juice

Olive oil

Fine grain sea salt

Black pepper

METHOD

  1. Add leftover orzo salad to a bowl along with the radicchio, cherries, olives, basil, feta, lemon zest, lemon juice, and olive oil, salt, and pepper. Toss well. Taste and adjust for seasoning.

  2. Top with protein of your choice. Enjoy!
