Cabbage + Herb Rice

INGREDIENTS

olive oil

1/2 medium yellow onion, diced

1 large clove of garlic, finely chopped

pinch of red chili flakes

1 teaspoon tomato paste

2 cups sliced cabbage (I used savoy)

1/3 cup basmati rice, rinsed well

1 cup water

sea salt

pepper 

lemon juice

1/3 cup or more fresh dill and parsley, finely chopped 

METHOD

  1. Heat up 2 tablespoons of olive oil in a medium-sized pot. Add in your onion and sauté until translucent, about 5 minutes.

  2. Add in garlic, chili flakes, and tomato pasta. Sauté for a couple of minutes.

  3. Add in cabbage, a splash of water, and season with some black pepper. Cook for about 5 minutes. Once cabbage has softened, add in your rinsed rice and a drizzle of oil. Sauté for a minute.

  4. Add in water and less than 1/2 teaspoon fine grain sea salt. Stir. Bring to a boil. Lower to a simmer and over with a lid.

  5. Cook for 15 minutes. Remove from heat and leave covered for 5 minutes.

  6. Squeeze some lemon and add herbs. Mix. Taste and adjust for seasoning. More salt? More lemon? Enjoy:)
