Spring Noodle Bowl

INGREDIENTS

Pick a base:

Rice noodles

Buckwheat soba noodles 

Sweet potato glass noodles

Whole grain spaghetti 

Pick 2+ Vegetables:

Carrots 

Bok Choy (raw or cooked)

Cabbage 

Cucumber 

Toppings:

Cilantro, Mint, Basil

Chopped Almonds, Cashews, Peanuts 

Chopped Radish 

Avocado

Furikake (seaweed + sesame seed)

Pick a Protein:

Cooked Tofu

Edamame 

Fried Egg 

Shredded chicken

Fish (such as salmon)

Shrimp

Dressing:

Sesame Oil 

Coconut Aminos 

Rice Vinegar 

Orange Juice 

Sesame Seeds 

Sriracha/Harissa/Chili Flakes


METHOD

  1.  Bring a pot of water to a boil. Season with kosher salt.

  2. While water boils, prep your veggies.

  3. Drop noodles into water and cook according to package instructions.

  4. Eyeball dressing ingredients in a glass jar. Shake well. Taste and adjust for seasoning.

  5. Assemble bowl - arrange veggies and noodles in the bowl. top with protein and toppings of your choice. Drizzle with dressing! Enjoy:)
