Cacao Protein Pancakes
INGREDIENTS
1 small banana or 1/2 of a large banana
1 egg
2 scoops protein powder (I used this almond protein powder from Octonuts, which is only made from almonds)
Splash of vanilla extract
Splash of almond milk
Dash of salt
Cinnamon
1 teaspoon cacao powder
Hemp seeds
Sesame seeds
Optional toppings: berry sauce, cacao nibs, nut butter, coconut yogurt
METHOD
Blend banana, egg, protein powder, almond milk, vanilla, salt, cinnamon, and cacao powder or mash banana and then whisk in the rest of the ingredients. This pancake is not really sweet so option to add additional sweetener of your choice.
2. Heat up coconut oil in a pan. Add in batter and spread into an even layer. Sprinkle with seeds. When pancake easily lifts from the pan, flip and then cook for a couple of minutes on the other side.
4. Add toppings of your choice and enjoy!
