Lemony Lentils
INGREDIENTS
1 cup dry green lentils, rinsed
2 cups water
1 small yellow onion, diced
2 cloves of garlic, minced
olive oil'
salt
pepper
1 dried lemon
METHOD
Place rinsed lentils, water, onion, and garlic in a large pot. Bring to a boil and then lower to a simmer.
Drop in the dried lemon. Add one tablespoon of olive oil and season with salt and pepper.
Put the lid on the pot and cook until lentils soften and begin to become mushy. Every 5 minutes of so, use a fork or wooden spoon to press the dried lemon to release its flavor.
Once lentils are finished cooking, taste and adjust for seasoning. Enjoy!
