Cacio e Pepe Cauliflower, Potato, and Zucchini and Gremolata

INGREDIENTS

1 head of cauliflower, thinly sliced

2-3 new potatoes, thinly sliced

2 zucchini, cut into coins

garlic-infused olive oil (or regular olive oil and sprinkle veg with garlic powder)

salt

pepper

grated parmesan

parsley, chopped

lemon zest

lemon juice


METHOD

Preheat oven to 400 degrees F convection or 425 regular.

Line a baking sheet with parchment paper.

Place sliced cauliflower, potatoes, and zucchini on the baking sheet. Drizzle with olive oil and season with salt and lots of pepper.

Roast in the oven for 25-30 minutes. Remove from the oven and sprinkle lots of grated parmesan. Place back in the oven for another 5-10 minutes.

While veg cooks, place chopped parsley, lemon zest, parmesan, lemon juice, salt, and pepper in a bowl. Mix.

Remove veg from the oven and garnish with the gremolata. Enjoy!
