Roasted Salmon with Herbs and Lemon Segments
INGREDIENTS
salmon filet
herbs such as parsley, dill, and thyme, chopped
lemon juice
whole lemon
honey or maple syrup
garlic powder
salt
pepper
chili flakes
olive oil
METHOD
Preheat oven to 400 degrees F.
Place salmon on a parchment-lined baking sheet.
Cut whole lemon (yup, the skin too!) into small pieces.
In a small bowl, combine lemon segments, lemon juice, salt, pepper, chili flakes, olive oil, and herbs.
Lightly brush salmon with honey or maple syrup.
Season with salt, pepper, and garlic powder.
Spoon on the sauce.
Bake in the oven for 10-12 minutes or until cooked to your liking.
