Cashew-Date Milk

INGREDIENTS

1/2 cup raw cashews, soaked in water overnight in the fridge 

2 small pitted dates, soaked in boiling water for 5 minutes (you can also use maple syrup)

splash of vanilla extract

dash of salt

pinch of cinnamon 

2 cups filtered water 

METHOD

  1. Drain cashews and wash a few times. Drain soaked dates.

  2. In a high-speed blender (I used a Vitamix), add rinsed cashews, dates, vanilla, salt, cinnamon, and water.

  3. Blend for about 3-5 minutes or until creamy. 

  4. Pour into your container and store in the fridge. Lasts 3-5 days.
