Smoky Pomegranate Tahini

INGREDIENTS

2 tablespoons tahini
1 teaspoon olive oil
1 tablespoon freshly squeezed lemon juice
1-1.5 teaspoons pomegranate molasses* (depending on how sweet you like it) 1 clove of garlic, minced
1/4 teaspoon or more smoked paprika
salt and pepper to taste
2 tablespoons filtered water

METHOD

  1. Add tahini, olive oil, lemon, pomegranate molasses, garlic, paprika, salt, salt, and pepper into a bowl. Whisk.

  2. Add water and whisk until mixture is smooth. Taste and adjust for seasoning. If tahini becomes too thick, add more water and/or lemon juice.

    *Note: if you don't have pomegranate molasses, omit and add a drizzle of maple syrup instead. Also, start with 1/8 teaspoon smoked paprika.
