Celery Root Salad with Fennel, Almonds, and Parmesan

INGREDIENTS

1 celery root, skin removed and cut into matchsticks

1/2 large fennel, thinly sliced

2 stalks celery, thinly sliced on a bias

1 small apple, cut into matchsticks

parsley, roughly chopped

toasted nuts such as hazelnuts, walnuts, or almonds

parmesan, shaved

1/4 cup sherry vinegar

1 teaspoon dijon mustard

1 teaspoon grainy mustard

5-6 tablespoons olive oil

1/2-1 teaspoon honey

3/4-1 teaspoon salt

pepper

METHOD

  1. Prepare dressing by combining sherry, mustards, oil, honey, salt, and pepper in a mason jar. Shake well.

  2. Place celery root, fennel, celery, apple, parsley, nuts, and parmesan in a large bowl and toss with enough dressing. Enjoy!
