Warm Farro with Asparagus, Peas, Mint, and Lemon Zest

INGREDIENTS

1 1/4 cup farro, rinsed

2 cups filtered water

olive oil

1 tablespoon butter

salt

pepper

asparagus, cut into bite-sized peas

frozen green peas

lemon zest

lemon

mint, roughly chopped

parmesan/pecorino cheese (optional)

METHOD

Place rinsed farro, 2 cups of filtered water, drizzle of olive oil, butter, and 1.5 teaspoons of salt in a pot. Bring to a boil.

Once it is boiling, lower the heat and place the lid on. Cook until the farro is al-dente or preferred texture (about 20-30 minutes).

Add in asparagus and peas. Taste for salt. Add in more if necessary and season with pepper. Cook with the lid on until asparagus and peas are cooked through.

Squeeze lemon, add in zest, and mint. Drizzle with more olive oil and garnish with cheese, if using.
