Celery Salad with Apple, Mint, Walnuts, + Golden Raisins
INGREDIENTS
Celery, thinly sliced (I like to use the celery leaves as well)
Fuji apple, cut into matchsticks
Mint leaves, torn
Walnuts, roughly chopped
Golden raisins
Parmesan, pecorino, ricotta salata, or smoked goat cheese
Lemon-dijon dressing (eyeball dijon mustard, lemon juice, olive oil, maple syrup, salt, and pepper)
METHOD
In a large bowl, combine celery, apple, mint, walnuts, golden raisins, and cheese. Drizzle with dressing and toss well. Taste and adjust for seasoning. I like to let the salad marinade for 10-15 minutes before enjoying.
