Chia-Cacao Oatmeal

INGREDIENTS

1/2 cup old-fashioned rolled oats

1 cup coconut water

1/2 cup filtered water

1/4-1/2 cup almond milk (any milk works) or kefir

1 1/2 teaspoons chia seeds

1 1/2 teaspoons goji berries

vanilla extract

cinnamon

chopped pear and/or apple

1/4-1/2 ripe banana, lightly mashed (depending on how sweet you like it)

1/2 teaspoon or more of raw cacao powder

salt

toppings: berry sauce, fresh berries, sliced fruit, nut butter (so good with peanut butter), cacao nibs, coconut flakes

METHOD

In a small pot, combine oats with coconut water, filtered water, and mashed banana . Bring to a soft boil.

Add chopped pear/apple, chia seed, goji berry, vanilla, cinnamon, cacao powder, and a dash of salt. If the oatmeal becomes too thick, add more coconut water/water. When the oats are almost cooked, add almond milk or kefir.

Taste and adjust. If it is not chocolatey enough, add more cacao. Not sweet enough, add more banana or a splash of maple syrup.

Add toppings of your choice and enjoy!
