Chia Pudding Parfait

INGREDIENTS

3 tablespoons chia seeds

1 cup almond milk (or your favorite milk)

1 teaspoon or more maple syrup (I prefer my chia seed pudding to not be sweet so add more if you like!)

splash of vanilla extract

yogurt or cottage cheese (optional)

smashed blackberries or my homemade berry sauce

sliced fruit of your choice such as banana, golden kiwi, peaches, nectarine, strawberries

chopped nuts, nut butter, oat granola, or my grain-free golden girl granola (I did golden girl granola and pistachios that I blitzed in the food processor/blender)

METHOD

  1. In a jar, combine chia seeds, milk, maple syrup, and vanilla extract. Stir very well. Cover with a lid and refrigerate for at least an hour or overnight. Stir well before serving.

  2. In a mason jar, glass, or bowl, layer some of the chia seed pudding with a spoonful or two of yogurt/cottage cheese (optional), smashed blackberries/berry sauce, sliced fruit, and granola. Enjoy!
