Chicken Sausage Hash
INGREDIENTS
Chicken sausage (I like Applegate or Bellinski’s chicken apple sausage), sliced into coins
Veggies of your choice (zucchini, spinach, kale, mushrooms, bell peppers, etc.)
Cooked sweet potato or regular potato
Chopped herbs such as parsley and/or cilantro
Fried egg (optional)
Optional additions: avocado, hot sauce
METHOD
Heat up a large skillet. Add a drizzle of oil and then add in your veggies (if using spinach, add towards the end of cooking) and chicken sausage. Saute until the veggies soften and the sausage becomes golden brown. Add in the cooked sweet potato and spinach if using. Cook for a few more minutes and finish with herbs.
Serve with a fried egg and condiments of your choice. Enjoy!
