Grass-Fed Beef Tacos
INGREDIENTS
~1/2 pound grass-fed ground beef
Black pepper
Coconut aminos
Finely chopped cilantro
Julienned zucchini
Julienned bell peppers
Spices such as smoked paprika, cumin, garlic powder, onion powder, chipotle chili powder
Lime
Romaine lettuce
Tortilla/rice (I used Siete)
Optional condiments: guacamole, sour cream/greek yogurt, cheese, thinly sliced radish, salsa
METHOD
Heat up a large skillet. Add a drizzle of oil and then add in your sliced zucchini and bell pepper. Season with salt and pepper. Once the veg soften, add in your spices and a squeeze of lime. Cook for a few more minutes and taste and adjust for seasoning. Finish with cilantro and transfer to a bowl.
In the same skillet, add your ground beef. Season with salt and use a spatula to break into smaller pieces. Once the beef is almost cooked, add a generous splash of coconut aminos. Finish with cilantro.
Assemble the taco - layer your tortilla with lettuce, sautéed veggies, beef, and condiments of your choice. Enjoy!
