Grass-Fed Beef Tacos

INGREDIENTS

  • Avocado oil

  • ~1/2 pound grass-fed ground beef

  • Fine grain sea salt

  • Black pepper

  • Coconut aminos

  • Finely chopped cilantro

  • Julienned zucchini

  • Julienned bell peppers

  • Spices such as smoked paprika, cumin, garlic powder, onion powder, chipotle chili powder

  • Lime

  • Romaine lettuce

  • Tortilla/rice (I used Siete)

  • Optional condiments: guacamole, sour cream/greek yogurt, cheese, thinly sliced radish, salsa

METHOD

  1. Heat up a large skillet. Add a drizzle of oil and then add in your sliced zucchini and bell pepper. Season with salt and pepper. Once the veg soften, add in your spices and a squeeze of lime. Cook for a few more minutes and taste and adjust for seasoning. Finish with cilantro and transfer to a bowl.

  2. In the same skillet, add your ground beef. Season with salt and use a spatula to break into smaller pieces. Once the beef is almost cooked, add a generous splash of coconut aminos. Finish with cilantro.

  3. Assemble the taco - layer your tortilla with lettuce, sautéed veggies, beef, and condiments of your choice. Enjoy!
