Herby Chickpea Salad

INGREDIENTS

1 15 oz can/package of cooked chickpeas

Desired amount of chopped cucumber, radish, and celery

Handful of freshly chopped herbs like dill, basil, and parsley

Chopped chives, scallion, or red onion

1-2 tablespoons of avocado oil mayo, veganaise, or mayonnaise

1.5-2 teaspoons dijon mustard

Freshly squeezed lemon juice

Salt and pepper to taste

METHOD

Drain and rinse canned chickpeas; place in a large bowl

Mash about half of the chickpeas using a fork (this is optional but will thicken the chickpea salad)

Add chopped vegetables, herbs, chives, mayo, dijon, lemon, salt, and pepper to the chickpeas

Mix until everything is well combined. Taste and adjust for seasoning

Serve with toasted bread and bibb lettuce
