Pumpkin Spice Overnight Oats

serves 1-2

INGREDIENTS

1/2 cup old-fashioned rolled oats

1 teaspoon chia seeds

1 teaspoon goji berry*

1 teaspoon pumpkin seeds (or sunflower seeds)*

1 teaspoon cacao nibs*

1/4 teaspoon cinnamon

Dash of cardamom (optional)

Dash of salt

Splash of vanilla

1/2 cup plant-based milk

3 tablespoons pumpkin purée (not pumpkin pie filling)

2 tablespoons plain yogurt, greek yogurt, or kefir

*Feel free to substitute these with any nuts, seeds, or more oats/chia seeds

METHOD

Combine all ingredients into a mason jar or glass airtight container.

Stir well and store in fridge overnight.

Enjoy in the morning and add desired toppings such as sliced banana, apple, pear, pomegranate seeds, coconut flakes, nuts or nut butter!
