Crunchy Maple-Chickpea Trail Mix
INGREDIENTS
1 can chickpeas, rinsed and dried
1 tablespoon melted coconut oil (or olivel/avocado oil)
1-2 tablespoons maple syrup (depending on how sweet you want it)
1 teaspoon vanilla extract
1/2 teaspoon or more of cinnamon
Dash of cardamom (optional)
Dash of cayenne (optional)
Salt
Trail-mix add-ins: walnuts, cashews, almonds, hazelnuts, toasted coconut, pumpkin seeds, dark chocolate, dried cherries, raisins
METHOD
1. Preheat oven to 400 degrees.
2. Place dried chickpeas on a parchment-lined baking sheet and bake for 10-minutes.
3. While chickpeas are in the oven, combine maple syrup, vanilla, cinnamon, cardamom, cayenne, and salt in a small bowl.
4. Remove chickpeas and pour the maple mixture over them and toss with a spoon.
5. Place chickpeas back in the oven for another 10 minutes, stir and then bake for another 10 minutes or until they are golden and crunchy.
6. Allow chickpeas to cool until mixing with other trail mix ingredients.
7. Store in the fridge.
