Chocolate-Covered Stuffed Dates

INGREDIENTS

1/2 cup chocolate chips

7-8 medjool dates, pitted *

Filling of choice: peanut butter, almond butter, sunflower seed butter, coconut manna, walnuts, almond, hazelnuts, etc.

Flakey sea salt (optional)

METHOD

Line a large plate or baking sheet with parchment paper

*If your dates are not already pitted, simply use a knife to cut each date down the middle lengthwise until you hit the pit (do not cut all the way through the date since you want it to remain in one, intact piece). Then, remove the pit

Stuff each date with your filling of choice and then push the two sides together to close the date

Melt chocolate chips using a double boiler or microwave

Using two forks, dip each date in the melted chocolate. Allow the excess chocolate to drip off the dates

Place each date on the parchment-lined surface

Refrigerate for 5-10 minutes until the chocolate begins to set and then sprinkle with flakey salt

Refrigerate until the chocolate has completely hardened
