Chinese Chicken Salad
INGREDIENTS
purple cabbage, thinly sliced
green cabbage, thinly sliced
romaine lettuce or napa cabbage, thinly sliced (optional)
green onion, thinly sliced
celery, sliced
mango, diced
carrots, julienned
shredded chicken
white and/or black sesame seeds
sliced almonds (optional)
6 tablespoons rice wine vinegar
juice from one lime
3-4 tablespoons olive oil
1 teaspoon sesame oil
1 teaspoon harissa or chili sauce
1-2 tablespoons soy sauce
1 tablespoon honey
1 large clove of garlic, minced
1/4 teaspoon or more ground ginger
salt and pepper to taste
METHOD
In a glass jar, combine rice vinegar, lime juice, olive oil, sesame oil, harissa, soy sauce, honey, garlic, ginger, salt, and pepper. Shake well.
In a large bowl, combine purple cabbage, green cabbage, green onion, celery, carrot, mango, sesame seeds, almonds, and chicken.
Toss with enough dressing. Taste and adjust for seasoning. Enjoy!
