Mexican Chopped Salad with Cilantro, Lime, & Jalapeno Dressing

SALAD INGREDIENTS

romaine lettuce, chopped

purple cabbage, thinly sliced

jicama, peeled and cut into matchsticks

cilantro, roughly chopped

mango, peeled and cut into chunks

avocado, cut into chunks

CILANTRO LIME DRESSING INGREDIENTS

1.5 cups cilantro

juice of 2 limes

2 teaspoons apple cider vinegar

1 tablespoon (or more) of honey

1/2-1 inch knob of jalapeno, seeds removed and cut into chunks

1/4 cup plus more olive oil

1/2 teaspoon or more salt

pepper to taste

METHOD

In a blender, add cilantro, lime juice, apple cider vinegar, honey, jalapeno, olive oil, salt, and pepper. Taste and adjust for seasoning.

Add the rest of the ingredients to a large bowl and toss with enough dressing. Enjoy!
