Chinese Chicken Salad with Kale + Cabbage

SALAD INGREDIENTS

Purple cabbage, thinly sliced

Tuscan kale, thinly sliced or finely chopped (can also use romaine lettuce)

Carrots, cut into matchsticks

Scallion or red onion, thinly sliced

Shredded chicken

Cilantro and/or mint, chopped

Sesame seeds

Toasted + salted peanuts or cashews, chopped

DRESSING INGREDIENTS

3 tablespoons unseasoned rice vinegar

Squeeze of lime juice or more rice vinegar

1/2 tablespoons plus 1 teaspoon sesame oil

2 teaspoons olive oil

1 tablespoon honey

Sriracha to taste

Sea salt to taste

METHOD

  1. Prepare salad dressing. Place all dressing ingredients in a mason jar or bowl. Shake or whisk well. Taste and adjust for seasoning. I added a drizzle of the dressing over the chopped kale and massaged to tenderize.

  2. Place cabbage, massaged kale, carrots, scallion, herbs, chicken, sesame seeds, and peanuts in a large bowl. Add some dressing. Toss well. Taste and adjust. Enjoy!
