Healthy Halloween Dirt Cups
These dirt cups are layered with silky smooth chocolate pudding made from silken tofu (I promise you can’t taste it), crushed chocolate cookies, and gummy works (or candy of your choice).
You can serve the pudding individual ramekins or in a larger bowl for sharing:)
INGREDIENTS
2 cups crushed chocolate cookies or sandwich cookies (I used Annies Homegrown chocolate bunnies but Oreos or Simple Mills chocolate sandwich cookies are great too; I used a food processor to blitz them but recommend crushing in a plastic bag)
12 oz silken tofu
1/2 cup dark chocolate chips
1/2 teaspoon coconut oil
2-3 tablespoons maple syrup
Splash of vanilla
Dash of sea salt
Optional: 1-2 tablespoons peanut butter or almond butter
Gummy worms or candy of your choice
METHOD
Melt chocolate chips and coconut oil in the microwave or using a double boiler.
In a food processor or blender, combine silken tofu, melted chocolate, maple syrup, vanilla, salt, and nut butter if using. Blend until very smooth. Taste and adjust.
In a bowl, pour about 1/3 of the crushed cookies and spread in an even layer. Pour the pudding over the cookies followed by the rest of the cookies. Arrange gummy worms or candy on top. Enjoy!
