Chocolate, Cherry, and Hazelnut Granola

this stuff is addicting. put in a bowl with cold nut milk or just eat it by the handful (that’s how I like it)

makes ~4.5 cups

INGREDIENTS

3 cups old-fashioned rolled oats

1/2 cup hazelnuts, roughly chopped (walnuts, cashews, or almonds work as well)

1/2 cup dried cherries

1/2 cup pumpkin seeds

1/4 cup raw cacao powder

2 teaspoons cinnamon

1 teaspoon salt

1/4 cup melted coconut oil

6 tablespoons maple syrup

2 teaspoons vanilla extract

flakey sea salt

chocolate chips

METHOD

Preheat oven to 325 degrees

Place oats, nuts, cherries, pumpkin seeds, cacao powder, cinnamon, and salt in a medium-sized bowl and stir well

In a separate bowl, whisk together coconut oil, maple syrup, and vanilla

Pour wet mixture into the bowl with the dry ingredients and mix until everything is well combined

Evenly spread the granola onto a parchment-lined baking sheet and bake for 25-30 minutes, stirring halfway

Remove granola from oven and sprinkle 1/2 cup (or however much you like) of chocolate chips. Place back into the oven for 5 minutes and then remove. Use a spoon to toss everything together and sprinkle with flakey sea salt

Put the baking sheet in the fridge/freezer until the chocolate has set and clusters form

Pour granola into a glass container and store in the fridge or freezer
