Chopped Tuna Salad
INGREDIENTS
Mixed greens
Persian cucumber, diced
Cherry tomatoes, halved
Hearts of palm, diced
Herbs such as cilantro, parsley, dill, and/or basil
Seed crackers (my favorites: Ella’s flats, Top Seedz, + Mary’s Gone Crackers)
Optional add-ins: radicchio, radish, pepperoncini)
Dijon mustard
Apple cider vinegar
Maple syrup/honey
Olive oil
Sea salt
Black pepper
METHOD
In a small bowl, combine dijon mustard, apple cider vinegar, maple syrup, olive oil, salt, and pepper. Whisk well. Taste and adjust for seasoning.
In a large bowl, combine lettuce, cucumber, tomato, hearts of palm, herbs, crushed seed crackers, tuna, and optional add-ins.
Drizzle some dressing and toss well. Sprinkle with nutritional yeast and enjoy!
