Cobb-ish Salad

INGREDIENTS

  • Mixed greens

  • Persian cucumber, diced

  • Cherry tomatoes, halved

  • Hearts of palm, diced

  • Green onion, chopped

  • Apple, diced

  • Hard-boiled eggs, diced

  • Walnuts, chopped

  • Nutritional yeast

  • Optional add-ins: radicchio, radish, avocado, chicken, cheese, herbs)

  • Dijon mustard

  • Apple cider vinegar

  • Maple syrup/honey

  • Olive oil

  • Sea salt

  • Black pepper

METHOD

  1. In a small bowl, combine dijon mustard, apple cider vinegar, maple syrup, olive oil, salt, and pepper. Whisk well. Taste and adjust for seasoning.

  2. In a large bowl, combine lettuce, cucumber, tomato, hearts of palm, green onion, apple, hard-boiled eggs, walnuts, and any optional add-ins.

  3. Drizzle some dressing and toss well. Sprinkle with nutritional yeast and enjoy!
