Cobb-ish Salad
INGREDIENTS
Mixed greens
Persian cucumber, diced
Cherry tomatoes, halved
Hearts of palm, diced
Green onion, chopped
Apple, diced
Hard-boiled eggs, diced
Walnuts, chopped
Nutritional yeast
Optional add-ins: radicchio, radish, avocado, chicken, cheese, herbs)
Dijon mustard
Apple cider vinegar
Maple syrup/honey
Olive oil
Sea salt
Black pepper
METHOD
In a small bowl, combine dijon mustard, apple cider vinegar, maple syrup, olive oil, salt, and pepper. Whisk well. Taste and adjust for seasoning.
In a large bowl, combine lettuce, cucumber, tomato, hearts of palm, green onion, apple, hard-boiled eggs, walnuts, and any optional add-ins.
Drizzle some dressing and toss well. Sprinkle with nutritional yeast and enjoy!
