Creamy Cabbage + Avocado Slaw

INGREDIENTS

1 cup thinly sliced green cabbage 

1/2 lightly packed herbs (I did combo of cilantro, parsley, mint), finely chopped

1 teaspoon or more sliced scallion (optional)

1/2 medium ripe avocado

1/4 teaspoon or more dijon mustard 

1-2 tablespoons acid (I did a combo of rice vinegar and red wine vinegar; lemon juice and apple cider vinegar would be great)

2 teaspoons or more olive oil

lots of salt and pepper 



METHOD

  1.  in a large bowl, mash avocado half very well. then add mustard, acid, oil, salt, and pepper and whisk together. taste and adjust for seasoning.

  2. add cabbage, herbs, and scallion if using to the bowl and toss well. i like to let the slaw sit for 5-10 minutes to marinade. taste it again and adjust. does it need more acid? mustard? salt?

  3. alternate between eating with a fork and scooping with chips:) enjoy!
