2-Ingredient Red Lentil Pancakes

INGREDIENTS

1/2 cup uncooked red lentils

1 cup water

1/2 teaspoon sea salt 

1 teaspoon curry powder OR mix of 1/4 teaspoon turmeric, 1/4 teaspoon smoked paprika, 1/2 teaspoon garlic powder

olive/avocado oil


METHOD

  1.  in a lin a bowl, combine lentils with water. soak for 3 hours.

  2. in a vitamix or high speed blender, combine lentils with the water, salt, and spices. blend until very smooth.

  3. heat up a nonstick pan and add a drizzle of oil.

  4. pour about 1/4 cup of the lentil batter and spread into an even layer. if you want a thicker pancake, don’t spread out as much. cook for 2-3 minutes on the first side, or until the edges curl up and the pancake easily releases from the pan. flip and cook for another 2 minutes. transfer to a plate or towel and repeat with remaining batter.

  5. serve with toppings of your choice (I made a creamy avocado cabbage slaw) and enjoy!
