Salted Date-Tahini Millionaire Bars

INGREDIENTS

1 cup almond flour

1.5 tablespoons coconut oil, melted

vanilla extract

2 teaspoons maple syrup

1/4 teaspoon salt

1/3 cup dates

1/3 cup runny tahini (I like the one from Trader Joe’s_

3 tablespoons coconut milk

1/8 teaspoon cinnamon

dash of cardamom

3/4 cup chocolate chips (I used a combo of semi-sweet and dark)

flakey sea salt

METHOD

Preheat oven to 350 degrees F.

Brush melted coconut oil in a loaf tin and then line with parchment paper.

In a large bowl, combine almond flour, coconut oil, maple, 1 teaspoon vanilla, and 1/4 teaspoon salt. Mix together and then press down into loaf tin. Bake in oven for 10 minutes and then allow to cool.

Place hot water over dates to soften them for about 5 minutes. Then, dice the dates.

In a small pot, combine tahini, chopped dates, 1 teaspoon vanilla, cinnamon, cardamom, and dash of salt, and coconut milk. Whisk over low-medium until for a few minutes.

Spread caramel over cooled shortbread and then refrigerate for 20-30 minutes.

Melted chocolate chips over a double boiler with 1 teaspoon coconut oil.

Pour chocolate over caramel and then refrigerate. Once chocolate begins to set, sprinkle with flakey sea salt. Refrigerate until completely set (I let it sit overnight).

Cut into bars and enjoy!
