Dreamy Almond Flour Snickerdoodles
INGREDIENTS
1 cup almond flour
1/8 teaspoon baking soda
1/8 teaspoon cream of tartar (optional)
1/8 teaspoon salt
1 tablespoon coconut oil, melted
1 teaspoon vanilla extract
2 tablespoons maple syrup
2 teaspoon coconut sugar (or cane sugar)
1/2 teaspoon cinnamon
METHOD
Preheat oven to 350 degrees F.
In a small bowl or measuring cup, whisk melted coconut oil, vanilla, and maple syrup.
in a separate bowl, combine almond flour, baking soda, cream of tartar and salt.
Add wet mixture to dry ingredients and mix until a moist ball farms.
Mix cinnamon and sugar together on a plate.
Roll dough into small balls and then roll in cinnamon-sugar.
Place dough balls on a parchment-lined baking sheet and lightly press down with your hand.
Bake for 10-12 minutes. Remove from oven and let cool for 5 minutes. Enjoy!
