Easy Homemade Granola

INGREDIENTS

3 cups gluten-free rolled oats

1/2 cup seeds (I do a combination of pumpkin and sunflower seeds)

1/2 cup unsweetened, dried coconut flakes

1 teaspoon ground cinnamon

1/4 teaspoon fine grain sea salt

1/4 cup + 1 tablespoon melted coconut oil or olive oil

1/3-1/2 cup maple syrup (depending on how sweet you like your granola)

1 teaspoon of vanilla

1 cup raw nuts (walnuts, cashews, pecans, and/or hazelnuts), roughly chopped

1/2 cup dried fruit (tart cherries, cranberries, apricots, etc), roughly chopped

METHOD

  1. Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper.

  2. In a large bowl stir together the oats, seeds, coconut flakes, cinnamon and salt.

  3. In a small bowl, combine the melted coconut oil, maple syrup, and vanilla. Whisk very well. Add the liquid mixture to the oats and stir to coat well.

  4. Transfer the mixture to the baking sheet and spread out in an even layer. pan. Bake for 25-30 minutes (ovens vary), stirring occasionally until golden brown. Add the chopped nuts and dried fruit to the pan and allow to cool.

  5. Transfer granola to an airtight container and store in the fridge or freezer.
