Superseed Granola
INGREDIENTS
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/2 cup unsweetened, untoasted coconut flakes
1/2 cup almonds, roughly chopped (optional; to make nut-free, sub with more seeds)
2 tablespoons hemp seed
1 tablespoon chia seed
2 tablespoons sesame seed
1 tablespoon poppy seeds
1/2 teaspoon cinnamon
1/4 teaspoon fine grain sea salt
2 tablespoons maple syrup
2 tablespoons melted coconut oil or olive oil
1 teaspoon vanilla extract
METHOD
Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper.
In a large bowl stir together the seeds, coconut flakes, almonds, cinnamon and salt.
In a small bowl, combine the melted coconut oil, maple syrup, and vanilla. Whisk very well. Add the liquid mixture to the seed mixture and stir to coat well.
Transfer the mixture to the baking sheet and spread out in an even layer. pan. Bake for 20-25 minutes (ovens vary), stirring occasionally until golden brown. Allow to cool completely.
Transfer granola to an airtight container and store in the fridge or freezer.
