Superseed Granola
INGREDIENTS
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/2 cup unsweetened, untoasted coconut flakes
1/2 cup almonds, roughly chopped (optional; to make nut-free, sub with more seeds)
2 tablespoons hemp seed
1 tablespoon chia seed
2 tablespoons sesame seed
1 tablespoon poppy seeds
1/2 teaspoon cinnamon
1/4 teaspoon fine grain sea salt
2 tablespoons maple syrup
2 tablespoons melted coconut oil or olive oil
1 teaspoon vanilla extract
METHOD
- Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper. 
- In a large bowl stir together the seeds, coconut flakes, almonds, cinnamon and salt. 
- In a small bowl, combine the melted coconut oil, maple syrup, and vanilla. Whisk very well. Add the liquid mixture to the seed mixture and stir to coat well. 
- Transfer the mixture to the baking sheet and spread out in an even layer. pan. Bake for 20-25 minutes (ovens vary), stirring occasionally until golden brown. Allow to cool completely. 
- Transfer granola to an airtight container and store in the fridge or freezer.
