Eggs + Rice Bowl

INGREDIENTS

Leftover rice (I used about 1/4 cup brown rice, but feel free to use as much as you like)

Sesame oil (or olive oil)

2 eggs, whisked in a bowl and seasoned with salt and pepper

Steamed veggies

Sauce - I combined soy sauce, coconut aminos, rice vinegar, and Trader Joe’s harissa (you can also use sriracha)

METHOD

  1. Heat up a skillet for 1-2 minutes. Add rice and a splash of water. Cook until rice is heated through. Push rice to the edge of the pan.

  2. Add sesame oil to the pan and heat for one minute before dropping in your whisked eggs.

  3. Cook eggs to your liking and then mix in the rice.

  4. Serve with steamed veggies and drizzle with the sauce. Enjoy:)
