Whipped Feta with Garlicky Roasted Tomatoes

INGREDIENTS

1 heaping cup (or more) of grape or cherry tomatoes

2 large cloves of garlic, sliced thickly

Olive oil

Chili flakes

Sea salt

1 heaping cup feta cheese (I like sheep’s or goat’s milk feta in brine)

1/4 cup greek yogurt

Torn basil

Freshly cracked black pepper

Serve with crackers, pita chips, toasted pita chips, toasted sourdough/ciabbata, toasted flatbread, or raw veggies


METHOD

  1.  Preheat the oven to 350 degrees F.

  2. Place tomatoes, chopped garlic, 3 tablespoons olive oil, a pinch of chili flakes, and a pinch of sea salt to a small baking dish. Bake in the oven for 15-25 minutes or until tomatoes have popped and are soft, mixing halfway. Remove from the oven and set to the side.

  3. While tomatoes cool, prepare the whipped feta. In a food processor, combine feta, yogurt, 2 tablespoons olive oil, and 1 tablespoon of water. Process until creamy and smooth. If the mixture is too thick, add another tablespoon of water. Taste and adjust for seasoning.

  4. Once your tomatoes have cooled, assemble. Spread whipped feta in a bowl and top with tomatoes and garlic (optional). Drizzle with the olive oil from the pan and garnish with basil and black pepper.

  5. Serve with bread, crackers, and/or veggies!
