Erewhon Kale, White Bean, + Avocado Salad
SALAD INGREDIENTS
~6 cups curly kale
1 can white beans, drained and rinsed
1-2 avocados, cubed
1/4-1/2 cup toasted sunflower seeds
1/4 cup hemp seeds
DRESSING INGREDIENTS
1/4 cup lemon juice
2-3 teaspoons dijon mustard
2 teaspoons maple syrup
1/4 cup plus a little more olive oil
fine grain sea salt to taste
Black pepper
METHOD
Prepare salad dressing. In a bowl or mason jar, combine lemon juice, dijon mustard, maple syrup, olive oil, salt, and pepper. Whisk/shake well. Taste and adjust for seasoning.
Place kale in a large bowl. Drizzle with 2 teaspoons of olive oil and use your hands to massage the oil into the kale.
Top with white beans, avocado, sunflower seeds, hemp seeds, and some dressing. Toss well. Taste and adjust. Enjoy!
