Roasted Salmon with Cherry Tomatoes + Basil

serves 4-6 people

INGREDIENTS

2.5 pounds of salmon 

1-2 cups cherry tomatoes

Handful of fresh basil, chopped 

3 large cloves of garlic, chopped 

Juice from 1/2 lemon

Olive oil

Sea salt

Black pepper

Red chili flakes 

Garlic powder

Onion powder

Paprika 

METHOD

  1. Preheat the oven to 400 degrees F.

  2. In a large casserole dish, place the tomatoes, basil, garlic, and lemon juice. Season with salt, pepper, and red chili flakes and drizzle with 3-4 tablespoons of olive oil. Toss everything together. Roast the tomatoes in the oven for 10-15 minutes. 

  3. Remove the casserole dish from the pan. 

  4. Lower the oven temperature to 275 degrees F. Arrange the salmon on top of the tomatoes. Brush the salmon with olive oil. Season with salt, pepper, garlic powder, onion powder, and paprika.

  5. Roast in the oven for 20-25 minutes or until the salmon reaches an internal temperature of 120-125 degrees F.
