Farro with Cabbage, Kale, Tomato, and Parmesan

INGREDIENTS

1 cup farro, rinsed
fine grain sea salt
olive oil
2 cloves of garlic, chopped
1/2 large yellow onion, thinly sliced
1/2 small green cabbage, thinly sliced
1 bunch kale, de-stemmed and thinly sliced
red chili flakes
cherry tomatoes, halved
lemon
pepper
parmesan cheese


METHOD

1. combine rinsed farro with 1 cup filtered water, 1/2 teaspoon fine grain salt, 1 clove of minced garlic, and 1 tablespoon olive oil in a small pot. mix and bring to a boil. lower to a simmer and add a bit more water. place the lid on the pot and cook until farro is tender (~10 minutes).
2. in a large pot, heat up olive oil. add onion and sauté until it starts to brown. add rest of garlic and chili flakes.
3. add cabbage and cook for a few minutes. then, add in tomatoes. sauté. add in kale.
4. season with salt and pepper, add in cooked farro, and squeeze some lemon.
5. taste and adjust for seasoning. grate lots of parmesan!!
