Sheet-Pan Lemon Pepper Tofu and Broccoli
INGREDIENTS
1 package extra-firm tofu
Olive oil
1 teaspoon garlic powder
3/4 teaspoon fine grain sea salt
1/4 teaspoon black pepper
2 teaspoons arrowroot powder (optional)
Zest of a lemon
Broccoli florets
Mini bell peppers
Trader Joe’s Cuban seasoning blend (or just use salt, pepper, and garlic powder)
Lemon, cut in half
METHOD
Press tofu for at least 30 minutes (pressing instructions here).
2. Preheat oven to 400 degrees F convection or 425 degrees F regular.
3. Line a large baking sheet with parchment paper.
4. In a small bowl, combine garlic powder, 3/4 teaspoon salt, 1/4 teaspoon pepper, 2 teaspoons arrowroot, and lemon zest. Combine.
5. Cut tofu into cubes and place in a mixing bowl. Toss with 1 tablespoon of olive oil. Add spice blend to tofu and toss gently with your hands.
6. Place broccoli and peppers on baking sheet. Season with olive oil and Trader Joe’s Cuban seasoning blend or just salt, pepper, and garlic powder. Toss with your hands.
7. Place tofu on other half of sheet pan.
8. Add 1/2 lemon on sheet pan cut side down.
9. Roast tofu and veg until golden brown.
10. Squeeze roasted lemon over tofu and toss!
