“Fried” Rice with Greens, Cilantro, and Lemon Segments

INGREDIENTS

cooked rice

beet greens (or swiss chard/kale), chopped

garlic-infused olive oil

red chili flakes

cilantro, roughly chopped

lemon segments (rind removed and flesh cut into small chunks)

salt

pepper

METHOD

Add chopped greens in a sauté pan and sauté for a few minutes with a squeeze of lemon.

Add garlic-infused oil, chili flakes, and cooked rice. Sauté until greens are wilted.

Add in cilantro and lemon segments. Season with salt and pepper.

Taste and adjust for seasoning.
