Golden Girl Granola

INGREDIENTS

1/2 cup walnuts 

1/2 cup pecans

1/4 cup almonds

1/4 cup hazelnuts 

1/4 cup pumpkin seeds 

1 tablespoon sesame seeds

1/4 cup coconut flakes

1 heaping teaspoon cinnamon

1/8-1/4 teaspoon cardamom 

pinch of salt 

2 tablespoons coconut oil, melted

2 tablespoons maple syrup 

1 teaspoon vanilla extract 

METHOD

Preheat oven to 350 degrees F.

Chop nuts, pumpkin seeds, and coconut flakes (I like to get them into pretty small chunks, but totally up to you).

Place nuts and seeds into a large bowl and add cinnamon, cardamom, salt and mix.

In a separate bowl, whisk coconut oil, maple, and vanilla.

Add liquid mixture to nuts and seeds and stir well.

Spread evenly on a parchment-lined baking sheet and bake in oven until golden, about 15-18 minutes, stirring halfway.
