Gluten-Free Cinnamon Apple Streusel Bread
APPLE BREAD INGREDIENTS
1 cup gluten-free oat flour
1 cup almond flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 heaping teaspoon cinnamon
1/2 teaspoon pumpkin pie spice (or more cinnamon)
2 eggs (sub for flax eggs to make vegan)
1/2 cup unsweetened apple sauce
1/3 cup honey or maple syrup (this bread is not too sweet so if you prefer it sweeter, increase to 1/3 + 2 tablespoons - 1/2 cup)
1/4 cup melted coconut oil
2 teaspoons vanilla extract
1.5 cups diced apples (peeled)
STREUSEL INGREDIENTS
1/4 cup oat flour
1/4 cup almond flour
1/3 cup chopped walnuts
1 teaspoon cinnamon
dash of sea salt
2 tablespoons melted coconut oil
3 tablespoons coconut sugar (or 2 tablespoons maple syrup)
METHOD
Preheat oven to 350 degrees F. Lightly grease your load tin with melted coconut oil and line with parchment paper so you can easily lift the bread out of the tin.
In a large bowl, combine oat flour, almond flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice. Stir.
In another bowl, beat your eggs. Then, add in the apple sauce, honey/maple syrup, coconut oil, and vanilla. Whisk well.
Pour the wet mixture into the dry mixture and stir to form a batter. Fold in diced apples.
Pour into the prepared loaf tin and smooth with a spatula.
Make the streusel - in a bowl, combine oat flour, almond flour, walnuts, cinnamon, salt, coconut sugar, and coconut oil. Use a spoon or your hands to combine.
Sprinkle the streusel over the batter.
Bake the apple bread for 30-35 minutes or until a toothpick comes out clean.
Cool for 20 minutes in the tin and then transfer to a wire rack to continue cooling.
Once bread is completely cool, slice and enjoy!
