Parmesan-Crusted Delicata Squash + Fennel
INGREDIENTS
1 delicata squash, cut in half crosswise, seeds removed, and then cut into rings
1-2 fennels, sliced
Olive oil
A lot of grated parmesan (3/4 - 1 cup)
Sea salt
Black pepper
METHOD
Preheat the oven to 425 degrees F and line 1-2 baking sheets with parchment paper.
Place sliced squash and fennel in a bowl and toss with olive oil, salt, and pepper.
Drizzle olive oil in the parchment-lined baking sheet and spread with your hands or a silicone brush.
Generously sprinkle most of the parmesan on the baking sheet.
Arrange sliced squash and fennel over the parmesan. Sprinkle the remaining parmesan over the veg and drizzle with a bit more oil.
Bake in the oven for 25-30 minutes (flipping halfway), or until veggies are cookies and parmesan is golden brown. Remove from the oven and allow the parmesan to cool and crisp up on the counter. Enjoy!
