Parmesan-Crusted Delicata Squash + Fennel

INGREDIENTS

1 delicata squash, cut in half crosswise, seeds removed, and then cut into rings

1-2 fennels, sliced

Olive oil

A lot of grated parmesan (3/4 - 1 cup)

Sea salt

Black pepper

METHOD

  1. Preheat the oven to 425 degrees F and line 1-2 baking sheets with parchment paper.

  2. Place sliced squash and fennel in a bowl and toss with olive oil, salt, and pepper.

  3. Drizzle olive oil in the parchment-lined baking sheet and spread with your hands or a silicone brush.

  4. Generously sprinkle most of the parmesan on the baking sheet.

  5. Arrange sliced squash and fennel over the parmesan. Sprinkle the remaining parmesan over the veg and drizzle with a bit more oil.

  6. Bake in the oven for 25-30 minutes (flipping halfway), or until veggies are cookies and parmesan is golden brown. Remove from the oven and allow the parmesan to cool and crisp up on the counter. Enjoy!
