My Go-To Salad Dressing

INGREDIENTS

1 tablespoon mustard (I use half dijon mustard and half grainy mustard)

1/4 cup acid (I use whatever I have on hand and will do a combo of lemon juice, red wine vinegar, apple cider vinegar, rice vinegar, and/or sherry vinegar)

1/2 teaspoon maple syrup (or more if you like your dressing on the sweeter side)

1/2-3/4 teaspoon fine grain sea salt

1/4 teaspoon pepper

1/2 teaspoon oregano (optional)

1/4-1/3 cup olive oil

1 garlic clove, minced (optional)

1-2 tablespoons minced shallot (optional)

METHOD

  1. Place all ingredients in a mason jar and shake well.

  2. Taste and adjust for seasoning. Enjoy!
