Clean-Out-The-Fridge Greek Orzo Salad
INGREDIENTS
orzo, cooked according to package instructions
leftover cooked quinoa
cooked chickpeas
cherry tomatoes, halved
persian cucumbers, diced
green onion, chopped
kalamata olives, halved
fennel, diced
dill, chopped
parsley, chopped
feta, crumbled (optional)
METHOD
Combine all ingredients in a large bowl and toss with enough dressing.
Taste and adjust for seasoning. Enjoy!
