Chopped Tuna Salad

INGREDIENTS

gem lettuce, romaine, mixed greens (whatever lettuce you have works!)

cherry tomatoes, halved

persian cucumber, cut into large chunks

kalamata olives, halved

cooked chickpeas

canned/jarred tuna

mayonnaise (avocado oil mayo to make dairy-free)

dijon mustard

lemon juice

herbs such as dill, parsley, chives

nutritional yeast

salt

pepper


METHOD

In a small bowl, combine tuna, mayo, mustard, a big squeeze of lemon, herbs, salt, and pepper. Taste and adjust for seasoning.

Combine lettuce, tomatoes, olives, chickpeas, and cucumber in a big bowl and toss with my sherry vinaigrette or go-to salad dressing. Top with tuna salad, nutritional yeast, more herbs, and freshly cracked black pepper.
