Greek Salad Wrap

INGREDIENTS

romaine lettuce, chopped

dill and mint, roughly chopped 

persian cucumber, diced

cherry tomatoes, diced

radish, diced

kalamata olives, halved

scallion, finely chopped 

feta, crumbled

cooked chickpeas

for the dressing: red wine vin, lemon, olive oil, honey/maple, oregano, salt, pepper

tortilla of your choice

olive tapenade (optional)

METHOD

  1. in a bowl, combine romaine, dill, mint, cucumber, tomato, olive, scallion, feta, and chickpeas.

  2. in another bowl, whisk together red wine vinegar, lemon, olive oil, honey/maple, oregano, salt, and pepper. 

  3. pour dressing over salad and toss well. taste and adjust for seasoning.

  4. spread olive tapenade over the tortilla. pour salad over the tortilla and wrap tightly. cut in half and enjoy:)
