Lentil and Kale Soup

INGREDIENTS

2 tablespoons olive oil

1/2 yellow or red onion, diced 

2-3 large cloves of garlic, finely chopped 

1/4 teaspoon curry powder 

1/4 teaspoon cumin 

1 tablespoon tomato paste 

~1-1.5 cups cooked green lentils

3.5-4 cups chicken or vegetable stock

salt and pepper to taste

chopped kale

lemon juice 

fresh herbs


METHOD

  1. heat up a pot or dutch oven and then add olive oil.

  2. sauté onions until translucent and then add garlic. sauté for two minutes and add cumin, curry powder, and tomato paste.

  3. add in cooked lentils, stock, salt, and pepper. stir. bring to a boil and then cover with the lid. simmer for 15-20 minutes.

  4. stir in kale and squeeze a little lemon. once kale is wilted, taste and adjust for seasoning.

  5. garnish with herbs. enjoy:)
